Use this flavorful tomato lime brown rice recipe as a side dish or as an ingredient in your favorite burrito or tostada recipe.
Tomato Lime Brown Rice
2 cups water
1 cup tomato sauce
1 cup brown rice
1 lime, zested
1/2 cup black beans, drained
1/2 cup frozen or fresh sweet corn
Instructions for Adults
Add water, tomato sauce and rice to a medium saucepan over medium-high heat. Bring to a boil and cover. Turn heat to low. Simmer according to time recommended on the rice package. When cooked, remove from heat and remove lid, allowing to cool slightly for about 5 minutes.
Instructions for Kids
Fluff rice gently with a fork. Measure and add lime zest, black beans, and corn to rice. Stir to combine. Serve!
