Minted Watermelon Cucumber Salad

Crisp, sweet, and oh-so-refreshing, this summer salad will certainly put a smile on the faces of your friends and family! This recipe will yield generous servings for either a potluck party, picnic, or a fun school activity.

Yield: 20 servings of 1/2 cup each

Minted Watermelon Cucumber Salad


  • 6 cups watermelon, cut in 1-inch cubes
  • 4 cups cucumber, or 3 medium sized cucumbers, thinly sliced
  • 6 Tablespoons torn mint leaves
  • Juice from a lime

Instructions for parents/teachers:

Use a knife to cut the watermelon into cubes and slice the cucumbers. Cut the lime in half.

Instructions for kids:

  1. Into a large bowl, place the 6 cups watermelon, 4 cups cucumber.
  2. Use your hands to tear the mint leaves into smaller pieces. Measure 6 Tablespoons of the torn mint and add it to the watermelon and cucumber.
  3. Squeeze the lime over the ingredients in the bowl.
  4. Stir gently to mix.
  5. Serve by placing 1/2 cup into each serving bowl.
