The following easy recipe was developed by 9-year-old Madelene Silva-Sciortino as part of our Kids’ Recipe Contest sponsored by SimplyRecipes.com. You can taste her recipe on October 22, when it will be served at a party at restaurant Ten22 to benefit our nonprofit, helping us raise much-needed funds to bring food literacy education to more kids in the region.

Yield: 4 skewers
- 4 bamboo skewers
- 4 1-inch pieces sirloin beef
- 8 1-inch pieces sweet potato
- 8 1-inch pieces butternut squash
- 1 teaspoon chopped thyme
- 1 Tablespoon olive oil
- Salt & pepper to taste
Preheat oven to 400 degrees. Mix all ingredients in bowl. Then place in small baking pan the squash and sweet potato. Roast for 15 minutes. Add beef. Roast 10 minutes longer.
Remove from oven. Peel sweet potatoes when slightly cooled. On each skewer, place one piece butternut squash, one piece sweet potato, one piece beef, one piece sweet potato and one piece butternut squash (in that order).
