Chicken & Brown Rice Salad with Honey Soy Dressing
This salad is easy to whip together, yet so incredibly tasty and nutritious!
Your body will be nourished from the protein from the chicken, the complex carbohydrates from the brown rice, and the vitamins and antioxidants from the fruit and vegetables.
Your taste buds will certainly enjoy the complex flavors from the simple dressing and the sweet crunch of the fresh vegetables!
We made this salad with the kids at Capitol Heights Academy and every one of them gobbled it up with gusto! It is a fun recipe to make with the whole family!
Chicken & Brown Rice Salad
- 1 cup cooked brown or black rice
- 1/4 cup lettuce, cabbage, or chard, shredded
- 2 mushrooms, chopped
- 1/2 mandarin, peeled and sectioned
- 2 Tablespoons shredded carrots
- 2 Tablespoons cooked chicken, cubed
- 1 Tablespoon cilantro
- Sesame seeds for garnish
Combine all ingredients in a small mixing bowl and stir to combine. Add 1-2 Tablespoons Honey Soy Dressing and stir. Enjoy!
Honey Soy Dressing Ingredients:
- 1/2 cup rice vinegar
- 1/2 cup soy sauce
- 6 Tablespoons honey
- 2 Tablespoons sesame oil
Combine all ingredients in a small mixing bowl and whisk to combine. Add 1-2 Tablespoons to the above Chicken & Brown Rice Salad recipe. You can store any extra dressing in the fridge. It will keep for a few weeks.
