Orange Zest & Cardamom Granola

 

Orange Zest & Cardamom Granola Recipe

Yield: 6 cups

Ingredients

3 cups rolled oats
1 cup pumpkin seeds
1 cup walnuts, chopped
1/4 cup brown sugar
1/4 cup maple syrup
1/4 cup canola oil
1/2 teaspoon salt 
Zest from 1 orange 
1 teaspoon cardamom
1 cup dried apricots, chopped 

Instructions for Adults

Preheat the oven to 250 degrees F. Provide general supervision. Assist by taking hot pans in and out of the oven.

Instructions for Kids

In a large bowl, add oats, pumpkin seeds, walnuts, and brown sugar. Stir to combine.

In a medium bowl, add maple syrup, canola oil, salt, orange zest, and cardamom. Stir to combine.

Pour the wet mixture over the dry ingredients. Stir well to coat the dry ingredients. Pour onto 2 sheet pans and use a spatula to spread into an even layer.

Place sheet pans in the preheated oven. Total cooking time will be 1 hour and 15 minutes. Remove the pans from the oven every 15 minutes to stir.

Remove from the oven to cool for 10 minutes. Add all of the granola to a large mixing bowl and add the dried apricots. Stir to combine.
