Celery Date & Blue Cheese Salad Recipe
Yield: 5 cups
Ingredients
8 celery stalks, thinly sliced on a diagonal, leaves
separated
6 dates, pitted and roughly chopped
Juice from 1 lemon
1/4 cup olive oil
2 oz. blue cheese, crumbled
Black pepper, freshly cracked, to taste
Instructions for Adults
Supervise for safe knife handling.
Instructions for Kids
Thinly chop the celery stalks at a diagonal. Pull the leaves off separately. Place these in a large mixing bowl along with the chopped, pitted dates, lemon juice, and olive oil. Stir to mix well. Add the blue cheese and fresh black pepper, then stir gently to incorporate.
