Food Literacy Center is thrilled to be selected as a charity partner by Dos Coyotes Border Cafe for “Tacos for Charity.” Dos Coyotes Executive Chef Mark Casale took a special trip to the Ewetopia Dairy for inspiration for this dish highlighting the “philosopher” sheep’s milk cheese! A donation from every sale of this special menu item will be made to Food Literacy Center to prevent childhood obesity through cooking and nutrition classes.

Asparagus Bacon Quesadilla

Grilled asparagus, honey-cured bacon, jack cheese and Ewetopia Dairy’s “philosopher” sheep’s milk cheese; paired with an arugula/pumpkin seed salad tossed lightly in agave-lime dressing. Also available without bacon.
