Food Literacy Center is thrilled to be selected as a charity partner by Dos Coyotes Border Cafe for “Tacos for Charity.”
Guest Chef Jay Veregge, executive chef at Ten22, in collaboration with Dos Coyotes Executive Chef Mark Casale created a special dish highlighting our 2014 Veggie of the Year – the carrot! A donation from every sale of this special menu item will be made to Food Literacy Center to prevent childhood obesity through cooking and nutrition classes.
Brisket Taco with Carrot Green Chimichurri
Brisket braised with red chilies, dark beer, and carrots which are then pureed to make the sauce. The taco is garnished with an escabeche of citrus cured red onions and carrots, and carrot green chimichurri using the tops of the carrots.
