Fiery Chinese Green Beans

Chinese green beans, or yard-long beans, have a crisp texture and taste delicious when sauteed. A talented and creative cook, our board member, Jillena Hernández created this recipe that’s perfect for summer nights. This Chinese green bean saute is not only light and crisp, but it’s also packed with flavor and nutrition. You can find Chinese green beans at farmers markets or at any Asian grocery store. Enjoy this summer delight!

Fiery Chinese Green Beans

Ingredients:

  • 1 tbsp olive oil
  • 1 bunch Chinese green beans cut in half (or left whole for the full adventure)
  • 1/2 onion
  • 4 cloves garlic
  • salt to taste
  • red pepper flakes to taste

Instructions:

Heat oil in a large non-stick pan. Saute beans for 5 minutes. Add onion, garlic, salt and, red pepper. Cook until desired tenderness is reached.

My preference is caramelized onions and slightly undercooked beans that still pack a little crunch.
